Baked Oatmeal


Brian loves this oatmeal! Definitely one of his favorites. He could eat it every day. The kids all enjoy it too and it is such a wonderful smell to greet you in the morning!







Baked Oatmeal
1/2 cup applesauce
3/4 cup sugar
2 eggs
1 1/2 cups milk
1/2 teaspoon salt
1/2 tsp. cinnamon
1 tablespoon baking powder
3 cups regular oats
1/2 cup craisins or raisins

Mix all together. Pour into a 9 x 13 inch baking dish. Sprinkle with brown sugar and cinnamon, if you'd like. Refrigerate overnight.
The next morning, put it in a cold oven and set it at 350 degrees. Bake about 40 minutes.
This is a little cake like, not like regular oatmeal.

This is going into some of the gift boxes I'm making too-- it fits great into a jar. I put powdered milk into the mix, so I'll just tell them to add applesauce, eggs and water.

Sounds umm interesting? Does it taste any better than regular oatmeal? Your french toast sounds good! I wonder if my fam and i can do that for Christmas morning..."Mom! You gotta read Rachels blog!":) hehe luv yas! And IU will be sure to check bake here for my ideas for dinners and such:)

:-) yes, it's better the regular oatmeal. This is the only way I will eat oatmeal (other than cookies). I still tend to not eat it... but, it's good, for an oatmeal.
Most people think it tastes like a desert.

I like oatmeal cooked and baked. This is a nice way to make a good warm breakfast that smells and tastes good. My stomach prefers to digest oatmeal without sugar or milk when I cook it in a pan. It doesn't have any trouble with the baked oatmeal though. Great pics!

Hi Mom-
Maybe you should try soaking your oatmeal like it calls for in that Nourishing Traditions Cookbook you got- maybe the soaked grains are what you need.
