Sweet Potato "Pie"

Again, another breakfast pie. How else would we eat veggies for breakfast??
I skip the crust when I make breakfast pie.

Sweet Potato "Pie"
4 cups mashed sweet potatoes
1/4 pound butter, softened
2 eggs
1 c white sugar
1/2 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 can evaporated milk

Mix thoroughly. Pour into 9" x 13" baking dish.
Bake at 400 degrees for 10 minutes, turn the oven down to 350 degrees and continue to bake for 40-45 minutes, until it doesn't "jiggle" anymore.
