Honey, Nut and Fruit Granola


This granola is really flavorful and packed with nutrients! The kids love it!


Honey, Nut and Fruit Granola

Ingredients:
8 cups old fashioned rolled oats
1 cup sliced almonds
1 cup pecan or walnut pieces
1 cup sunflower seeds
1 cup pumpkin seeds
1 cup coconut (shredded or flaked)
1 cup coconut oil
3/4 cup honey
1 tablespoon vanilla extract
1/2 teaspoon sea salt

--- after baked mix in ---
1 cup raisins
1 cup dried cranberries
1 cup chopped dried apricots
1 cup chopped dried dates


Directions:
Combine dry ingredients in large bowl. Heat coconut oil and honey until well combined, remove from heat and stir in vanilla extract.
Pour over dry ingredients, mix thoroughly.
Spread granola over parchment paper lined pans- I use two 9"x13" baking dishes.

Bake at 250˚ for 2 hours, stirring mixture after 1 hour of baking. Remove from oven and allow to cool before adding the dried fruit. Mix and store in airtight container.
