One of my favorite desserts!
Placing the peaches on the batter:
Peach Cobbler
3/4 stick butter
2 c. white flour
2 c. sugar
4 tsp. baking powder
1 1/2 c. milk
pinch of salt
2 cans sliced peaces (or 2- 2 1/2 c. fresh fruit)
Put butter in 9x13 baking dish, set in oven and preheat to 375 degrees.
Mix everything except fruit. Pour batter into hot butter, top with fruit, do not stir.
Bake at 375 degrees for 40 minutes. Best served warm.
This is really good with raspberries as well.

Coffee Cakes
If you haven't noticed... I make alot of coffee cakes and just change them a little each time. Kind of like my basic muffin recipe.
My basic Coffee Cake Recipe:
1 c. sugar*
1/3 c. oil
2 eggs
1 c. milk
2 c. white flour
1 c. whole wheat flour
4 tsp. baking powder
1 tsp. salt
Mix and pour into greased 9" x 13" baking dish. Bake at 375 degrees for 35 minutes.
*If you want a sweeter cake add another 1/2 c. sugar.
Here are a few new variations:
Apple Coffee Cake

1 grated apple
Apple/Raspberry Coffee Cake
Add to basic recipe:
1/2 c. fresh or frozen raspberries
1 chopped apple
Carrot Coffee Cake
Add to basic recipe:
1 or 2 grated carrots
1 tsp cinnamon
Topped with some leftover Cream Cheese Frosting

Pepperoni Lasagna
Pepperoni Lasagna
16 oz lasagna noodles, cooked 'al dente'
16 oz mozzarella cheese, grated
26 oz jar pasta sauce
24 oz small curd cottage cheese
Layer all in 9" x 13" baking dish
In order to not have excess noodles, make your layers thin, I normally layer in this order:
1) sauce (on bottom of pan)
2) 3 noodles
3) cottage cheese, spread thin on noodles (about 1 spoon-full per noodle)
4) pepperoni, 4 on each noodle
5) small spoon-full pasta sauce, between each pepperoni slice
6) sprinkling of mozzarella cheese
7) 3 noodles
Repeat until all ingredients are used up. I try to leave some extra cheese so the top has a good sprinkling of cheese over it.
Bake in 350 degree oven for about 30 minutes- sauce should be bubbly around the edges.
Lasagna in progress:

This Lasagna stayed together better than any I have made before!
And it was a hit with everyone!

And more on my lack of posting...
So this morning I was trying to upload some pictures on Pepperoni Lasagna, but they just wouldn't go through for me, so I gave up and thought I would give you my next "tidbit" of news.
Along with my torn up house and my 1 foot cooking area... I have been blessed with morning sickness. Yup- I'm due in December with another little one! God is good.
So, I have cooked and I did write down a menu in a notebook... and I've spent alot of time sleeping and feeling sick. Thanks for still checking my blog... I will still work on it, don't give up on me. :-)
